My lovely mother in law created this beautiful filo pie for me recently, and it was utterly fabulous!
Loaded with the goodness of spinach and mushies, alongside the salty kick of feta, and decadent crunch of filo pastry.
This luscious pie is a crowd pleaser, and easy to throw together with only 7 ingredient's required!

Filo Pie
- Prep: 20 mins
- Cook: 30-40 mins
- Total: 60 mins

- Yield: 6 servings
Ingredients
- 1 packet of fresh spinach
- 8 sheets of filo pastry
- 4 eggs
- 6 mushrooms
- 150g of feta
- 2 spring onions
- 2 tablespoons butter, melted
You will need
A medium sized baking dish, a pastry brush and mixing bowl.
Preparation
Step 1
Steam the spinach, press out all the liquid and allow to cool. Wash and slice spring onion and put aside.
Step 2
Peel and cut mushroom's in small pieces.
Step 3
In a medium baking or pie dish lay your first layer of filo, brush with melted butter and continue to layer the base as seen in the picture below, brushing with butter in between each layer.
Step 4
In a bowl mix all ingredient's, including crumbled feta, spring onions, spinach, mushrooms and whisked eggs. Pour into in baking dish.
Step 5
Fold the layers of pastry over the mix, scrunch an additional piece of pastry on top to make the pie extra crunchy, then brush with butter.
Bake the pie on the middle rack of your oven at 180 degrees for 40mins.
