Apple and Rhubarb crumble

Ingredients
- 3 green apples
- 1 bunch of rhubarb
- 1/3 cup of coconut sugar
- 1/3 cup of oats
- 1/3 wholemeal flour
- 1/3 cup of desiccated coconut
- 3 tablespoons of butter
Preparation
Step 1
Peel your apples and thinly slice, cut the rhubarb into small pieces.
step 2
Place the apples and rhubarb into a saucepan with 1 cup of water, and simmer for 10 mins.
Allow to cool and drain off excess water.
Step 3
Place all of your dry ingredients in a mixing bowl, rub the butter through the ingredients until it becomes a crumble consistency.
Step 4
Rub a baking dish with coconut oil to stop the crumble from sticking, pour the apple and rhubarb mix in the baking dish.
Lightly spread the crumble mix on top, place on a rack in the middle of the oven, and cook at 180 degrees for 25-30 minute until nicely browned.
This delicious crumble is best enjoyed warm, with a healthy size scoop of your choice of ice cream or yoghurt.

I find that there are always of cutting out unnecessary quantities of sugar, and you could even use coconut oil instead of butter if you wanted to clean up your animal fats intake even more.
